Robert Quehan, 32, has been appointed as Head Chef at the four-star Macdonald Botley Park Hotel, Golf & Spa near Southampton, where he will work with a team of six responsible for the hotel’s AA rosette fine dining Winchester Restaurant and catering for events in the conference and banqueting suites.
He joins the hotel after spending five years running his own restaurant, the AA two rosette Chesil Rectory, in Winchester. Previously he has held various positions in renowned London restaurants such as The Ivy and the Dorchester Hotel as well as a spell with Conran.
Robert has brought his distinctive modern French style of cuisine to Botley Park and has ambitious plans to increase the hotel’s restaurant rating from one to two rosettes. His new menu places emphasis on the use of the best local produce such as freshly caught sea bass from the south coast and locally reared pigeon.
Delighted with his new position, Robert said; “My aim is for people to come to Botley Park and enjoy some seriously good food. Our plans include sourcing high quality local suppliers from which to source really fresh produce in keeping with Macdonald’s environmental and sustainable dining ethos.”
